💡 Use an 8×8 pan with a silicone muffin mold or 4 paper-lined muffin cups that fit. Bake in batches if needed. Convection Bake at 330°F gives the best rise.
🥘 Ingredients
Dry Ingredients
  • 1 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
Wet Ingredients
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
Mix-ins
  • 1 cup fresh blueberries
Topping
  • 1 tbsp turbinado sugar (for topping)
📝 Instructions
  1. Whisk flour, sugar, baking powder, and salt in a large bowl. Shared 💡 Proper whisking distributes the baking powder evenly — no bitter pockets.
  2. In a separate bowl, whisk oil, egg, buttermilk, and vanilla until smooth. Shared 💡 Oil makes muffins more moist than butter. If using butter, melt and cool it first.
  3. Pour wet ingredients into dry. Stir with a spatula until just barely combined — a few streaks of flour are fine. Shared 💡 Lumpy batter = tender muffins. Overmixing = tough, tunneled muffins with peaked tops.
  4. Gently fold in blueberries. Do not crush them. Shared 💡 Tossing blueberries in a spoonful of flour first helps prevent them from sinking.
  5. Preheat Ninja on Convection Bake at 330°F for 3 minutes. Lower Oven 💡 The slightly lower temp prevents the tops from burning before the centers are done.
  6. Fill muffin cups 3/4 full. Sprinkle turbinado sugar on top of each. Convection Bake at 330°F for 13-15 minutes until a toothpick comes out clean. Lower Oven 💡 Turbinado sugar on top gives that bakery-style crunchy crown.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack. Cool 10 more minutes before eating. Shared 💡 Hot blueberries are like molten lava — let them cool or risk a burned tongue.
💡 Ninja Tips

Room temperature ingredients matter for muffin rise. Cold egg or buttermilk leads to dense muffins. Fill cups only 3/4 full for proper doming. Frozen blueberries work — do not thaw, add 2 minutes to bake time.
