Chicken
  • 2 lbs chicken thighs (bone-in skin-on)
Sauce
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar (cane vinegar for authenticity)
  • 6 cloves garlic (crushed)
  • 3 bay leaves (dried)
  • 1 tsp whole black peppercorns
  • 1 tbsp brown sugar (packed)
Cooking
  • 1 tbsp vegetable oil
📝 Instructions
  1. Mix soy sauce, vinegar, garlic, bay leaves, peppercorns, and brown sugar in a bowl. Shared 💡 The marinade becomes the sauce — do not discard it.
  2. Add chicken thighs. Coat well. Marinate at least 15 minutes at room temperature. Shared 💡 Even a short marinade makes a big flavor difference.
  3. Preheat Ninja on Air Fry at 380°F. Place chicken skin-side down in pan. Shared 💡 Skin-down first renders fat for crispiness.
  4. Cook 12 minutes, basting with reserved marinade halfway through. Flip, cook 10 more minutes basting again, until internal temp reaches 175°F. Top Oven 💡 Basting builds layers of flavor on the skin.
  5. While chicken rests, pour remaining marinade into a small pan. Simmer 3-5 minutes until slightly thickened into a sauce. Shared 💡 Boiling the marinade makes it safe and concentrates flavors.
