  • 8 oz Mexican chorizo (raw casings removed)
Eggs
  • 6 large eggs (beaten)
Base
  • 8 small tortillas (corn or flour)
Topping
  • 1/2 cup Oaxaca cheese (shredded)
  • 1 avocado (sliced)
Garnish
  • 1/4 cup fresh cilantro (chopped)
  • 1 lime (cut into wedges)
Sauce
  • 1/4 cup salsa verde
📝 Instructions
  1. Preheat Ninja on Air Fry at 380°F. Line basket with perforated parchment. Shared 💡 Parchment catches rendered chorizo fat.
  2. Spread crumbled chorizo evenly. Cook 5-6 min until crispy, breaking apart halfway. Top Oven 💡 Chorizo should sizzle and render its red oil.
  3. Push chorizo to one side. Pour beaten eggs on other side. Cook at 350°F for 3-4 min, stirring gently until just set. Top Oven 💡 Remove eggs while slightly wet — carryover heat finishes them.
  4. Wrap tortillas in foil. Warm at 320°F for 1-2 minutes. Top Oven 💡 Foiled tortillas steam gently, staying soft.
  5. Fill tortillas with chorizo-egg mixture. Top with cheese, avocado, cilantro, salsa, lime. Shared 💡 Serve immediately while cheese melts from residual heat.
💡 Ninja Tips

Use Mexican chorizo (raw loose) NOT Spanish chorizo (cured firm). Remove eggs when slightly wet. Double-layer tortillas.

Scaling: Double: Two batches. Half: 4 oz chorizo, 3 eggs, 4 tortillas.
