Dry
  • 2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 2 tsp cinnamon (ground)
  • 1/4 tsp nutmeg (ground)
  • 1/4 tsp salt
Wet
  • 1 1/2 cups milk
  • 1/4 cup maple syrup (pure)
  • 1 large egg (room temp)
  • 1 tsp vanilla extract (pure)
Mix-in
  • 1 large apple (peeled and diced small)
Topping
  • 2 tbsp brown sugar (for topping)
📝 Instructions
  1. Mix oats, baking powder, cinnamon, nutmeg, and salt in a large bowl. Shared 💡 Whisk dry ingredients together for even spice distribution.
  2. Whisk milk, maple syrup, egg, and vanilla in separate bowl. Shared 💡 Room-temperature egg incorporates more smoothly.
  3. Combine wet and dry ingredients. Fold in diced apple. Shared 💡 Do not overmix — just until combined.
  4. Spray 6 silicone muffin cups with cooking spray. Divide mixture evenly among cups. Shared 💡 Fill each about 3/4 full for room to rise.
  5. Preheat Ninja on Convection Bake at 350°F. Place cups in basket. Bake 14-16 minutes until set and golden on top. Top Oven 💡 Convection Bake gives even, domed muffin tops.

💡 Ninja Tips
