🥘 Ingredients
Scallops
  • 1 lb sea scallops (large, dry-packed, side muscle removed)
  • 1/4 tsp salt
  • 1/8 tsp black pepper (freshly ground)
Sauce
  • 2 tbsp butter (melted)
  • 3 cloves garlic (minced)
  • 1/4 cup Parmesan cheese (freshly grated)
  • 1 tbsp lemon juice (fresh)
  • 1 tbsp fresh parsley (chopped)
Pan
  • 1 tbsp olive oil (for pan)
Serving
  • 1 lemon (cut into wedges)
📝 Instructions
  1. Pat scallops EXTREMELY dry. Remove side muscle. Season with salt and pepper. Shared 💡 Dry scallops = proper sear. Wet scallops = steamed.
  2. Preheat Ninja on Air Fry at 400°F. Add olive oil to 8×8 pan, heat 2 min. Shared 💡 Hot pan + hot oil = golden crust on scallops.
  3. Place scallops in hot pan flat-side down. Air Fry at 400°F for 4 minutes. Top Oven 💡 Do not move them — let the crust develop.
  4. Mix melted butter, garlic, Parmesan, lemon juice, parsley. Shared 💡 Garlic-Parmesan butter is pure gold.
  5. Flip scallops. Pour garlic-Parmesan butter over top. Air Fry 3-4 more minutes. Top Oven 💡 Scallops done when opaque throughout, 125°F internal.
  6. Rest 2 minutes. Spoon pan sauce over scallops. Serve with lemon. Shared 💡 Scallops overcook in seconds — pull them right at opaque.
💡 Ninja Tips

Buy DRY-PACKED scallops — wet-packed will never sear. Pat bone-dry. Do not move for first 4 minutes. Pull at opaque — they cook fast.

Scaling: Double: Larger pan or two batches. Half: 1/2 lb; same time.
