🥘 Ingredients
Lamb
  • 8 lamb rib chops (about 1 1/2 lbs, frenched)
  • 2 tbsp olive oil (extra virgin)
Herb Crust
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh rosemary (finely chopped)
  • 1 tbsp fresh thyme (leaves only)
  • 3 cloves garlic (minced)
  • 1/2 tsp salt (kosher)
  • 1/4 tsp black pepper (freshly ground)
Serving
  • 1 lemon (cut into wedges)
  • 2 tbsp fresh mint (chopped, for garnish)
📝 Instructions
  1. Pat lamb chops dry. Brush with olive oil, then Dijon mustard. Shared 💡 Mustard helps herb crust adhere and adds tang.
  2. Mix rosemary, thyme, garlic, salt, pepper. Press onto both sides of chops. Shared 💡 Fresh herbs only — dried will not give the same result.
  3. Preheat Ninja on Air Fry at 400°F for 3 minutes. Shared 💡 High heat = beautiful sear on the chops.
  4. Place chops in pan single layer. Air Fry at 400°F for 5 minutes. Top Oven 💡 First side develops the crust.
  5. Flip carefully. Air Fry 4-5 more min for medium-rare (130°F internal). Top Oven 💡 130-135°F = medium-rare. Use a thermometer.
  6. Rest 5 minutes — critical for lamb. Squeeze lemon and sprinkle mint. Shared 💡 Lamb needs a full rest for juices to redistribute.
💡 Ninja Tips

Fresh herbs only — dried will not stick. 130°F for medium-rare. Lamb rests longer than beef — full 5 minutes. Lemon and mint are classic finishing touches.

Scaling: Double: Two batches. Half: 4 chops; same cook times.
