💡 Air fry basket in single layer. Zucchini releases water — do not crowd. Use a solid pan (not the basket) — this recipe contains liquids.

Zucchini
  • 2 medium zucchini (sliced into 1/4-inch rounds)
Coating
  • 1/4 cup Parmesan cheese (freshly grated)
  • 1/4 cup panko breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/8 tsp black pepper
Assembly
  • 1 tbsp olive oil (for tossing)
Serving
  • 1/4 cup marinara sauce (warmed, for dipping)
📝 Instructions
  1. Slice zucchini 1/4 inch thick. Pat dry with paper towels. Shared 💡 Zucchini holds lots of water — patting dry helps them crisp.
  2. Mix Parmesan, panko, garlic powder, Italian seasoning, salt, pepper in a bowl. Shared 💡 Freshly grated Parmesan melts and crisps better than pre-shredded.
  3. Toss zucchini slices with olive oil, then coat in Parmesan-panko mixture. Press firmly. Shared 💡 Oil helps the coating stick and promotes browning.
  4. Preheat Ninja on Air Fry at 400°F. Arrange slices in pan single layer. Shared 💡 Single layer only — stacking = steaming.
  5. Air Fry at 400°F for 5 minutes, flip carefully, 5 more until golden and crisp. Top Oven 💡 Thin slices may finish faster — watch closely.
  6. Rest 2 minutes — they crisp up more as they cool. Serve with warm marinara. Shared 💡 Like potato chips, they crisp further after removal.
