💡 Use the air fry basket. Cut peppers into uniform strips for even cooking. The high heat caramelizes their natural sugars — do not be alarmed by charred spots, that is flavor. Use a solid pan (not the basket) — this recipe contains liquids.

Main
  • 1 red bell pepper (sliced into strips)
  • 1 yellow bell pepper (sliced into strips)
  • 1 orange bell pepper (sliced into strips)
  • 2 tbsp olive oil
Seasoning
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
Finish
  • 1 tbsp balsamic vinegar
Garnish
  • 2 tbsp fresh basil (torn)
📝 Instructions
  1. Core and seed peppers. Slice into 1/2-inch wide strips. Shared 💡 Uniform width equals uniform cooking — thin strips burn, thick strips stay raw.
  2. Toss pepper strips with olive oil, salt, and pepper. Shared 💡 Coat every strip — the oil is what conducts heat for caramelization.
  3. Preheat Ninja on Air Fry at 380°F for 3 minutes. Lower Oven
  4. Place peppers in the pan in a single layer. Air Fry at 380°F for 6 minutes. Lower Oven 💡 Some overlap is okay — peppers shrink as they cook and release moisture.
  5. Shake or toss peppers. Air Fry at 380°F for another 5-6 minutes until softened with charred edges. Lower Oven 💡 Look for dark brown to lightly blackened spots — that is the natural sugar caramelizing.
  6. Transfer to a bowl. While hot, toss with balsamic vinegar and fresh torn basil. Shared 💡 Tossing with balsamic while hot lets it absorb into the peppers.
💡 Ninja Tips

Multi-colored peppers are not just pretty — each color has a slightly different sweetness level. Red is sweetest, green is least sweet (and most bitter). For a spicy kick, add one poblano or jalapeño to the mix.

Scaling: To double: cook in batches. To halve: use 1-2 peppers, adjust seasoning.
