Filling
  • 10 oz frozen spinach (thawed and squeezed very dry)
  • 8 oz feta cheese (crumbled)
  • 4 oz cream cheese (softened)
  • 1/4 cup fresh dill (chopped)
  • 2 green onions (finely sliced)
  • 1 egg (lightly beaten)
  • 1/4 tsp nutmeg (ground)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • 16 sheets phyllo dough (thawed)
Assembly
  • 1/2 cup butter (melted)
📝 Instructions
  1. Squeeze spinach in a clean kitchen towel until bone-dry. Mix with feta, cream cheese, dill, green onions, egg, nutmeg, salt, pepper. Shared 💡 Spinach MUST be completely dry or triangles get soggy.
  2. Lay out one sheet of phyllo. Brush lightly with melted butter. Top with second sheet, brush again. Cut into 3 long strips. Shared 💡 Keep phyllo covered with damp towel — it dries out in seconds.
  3. Place 1 tablespoon of filling at one end of each strip. Fold into triangles using the flag-fold method. Brush edges with butter to seal. Shared 💡 Flag-fold: fold corner over filling to opposite edge, then continue folding up the strip.
  4. Preheat Ninja on Air Fry at 360°F. Spray triangles with cooking spray. Shared 💡 Oil spray helps phyllo crisp and brown.
  5. Place triangles seam-side down in pan single layer. Cook 8-10 minutes at 360°F until golden brown and crispy, flipping halfway. Top Oven 💡 Seam-side down prevents unwrapping during cooking.
  6. Let cool 2 minutes — filling is molten hot! Serve warm. Shared 💡 Warn guests — the filling holds heat like lava.
