Wet
  • 2 ripe bananas (very ripe, heavily speckled)
  • 1/3 cup butter (melted and slightly cooled)
  • 1/2 cup brown sugar (packed)
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract (pure)
Dry
  • 1 1/2 cups all-purpose flour (spooned and leveled)
  • 1 tsp baking soda (fresh)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (ground)
Mix-ins
  • 1/2 cup walnuts (chopped)
📝 Instructions
  1. Preheat Ninja on Convection Bake at 350°F. Line 6-cup muffin tin with paper liners. Shared 💡 Fill empty cups with water for even heat distribution.
  2. Mash bananas. Stir in melted butter, brown sugar, egg, and vanilla. Shared 💡 A few small banana lumps are fine — they add moisture.
  3. Whisk flour, baking soda, baking powder, salt, and cinnamon in separate bowl. Shared 💡 Whisking aerates flour for lighter muffins.
  4. Fold dry into wet until just combined. Fold in walnuts. Do NOT overmix. Shared 💡 Stop when the last streak of flour disappears.
