Chicken
  • 4 chicken leg quarters (about 2 lbs)
Peri Peri
  • 4 red bird eye chilies (stems removed)
  • 4 cloves garlic (peeled)
  • 1 red bell pepper (roasted and peeled)
  • 2 lemons (juiced)
  • 1/4 cup olive oil (extra virgin)
  • 2 tbsp red wine vinegar
  • 1 tbsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt (kosher)
📝 Instructions
  1. Blend chilies, garlic, roasted bell pepper, lemon juice, olive oil, vinegar, paprika, oregano, and salt until smooth. Shared 💡 Wear gloves when handling bird eye chilies!
  2. Score chicken deeply with a sharp knife — 3 slashes per piece. Coat with 3/4 of the peri peri sauce. Marinate 1-24 hours. Shared 💡 Scoring lets the marinade penetrate deep into the meat.
  3. Preheat Ninja on Air Fry at 380°F. Place chicken skin-side down in pan. Shared 💡 Longer marination = more intense flavor.
  4. Cook skin-side down 12 minutes. Flip, cook 8-10 more minutes until internal temp reaches 175°F. Top Oven 💡 Leg quarters need 175°F for tender dark meat.
  5. Baste with remaining peri peri sauce during the last 2 minutes. Top Oven 💡 Final baste adds fresh spicy kick.
  6. Rest 5 minutes before serving. Have cold drinks ready — this brings heat! Shared 💡 The heat builds as you eat — it is a journey.
