💡 Air fry basket. Soak wooden skewers in water 30 minutes before using. Use a solid pan (not the basket) — this recipe contains liquids.

Beef
  • 1 lb sirloin steak (cut into 1-inch cubes)
Marinade
  • 1/3 cup soy sauce (low sodium)
  • 2 tbsp mirin
  • 2 tbsp brown sugar (packed)
  • 1 tbsp rice vinegar
  • 2 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 1 tsp sesame oil
Glaze
  • 1 tbsp cornstarch (mixed with 2 tbsp water)
Serving
  • 1 tbsp sesame seeds (toasted, for garnish)
  • 2 green onions (sliced)
📝 Instructions
  1. Whisk soy sauce, mirin, brown sugar, vinegar, garlic, ginger, sesame oil. Reserve 1/4 cup. Shared 💡 Reserve before raw meat touches — will become glaze.
  2. Pour remaining marinade over beef. Marinate 30 min at room temp. Shared 💡 Even 30 minutes infuses great flavor.
  3. Thread beef onto soaked skewers, 4-5 cubes per skewer. Shared 💡 Leave small gap between cubes for even cooking.
  4. Preheat Ninja on Air Fry at 400°F. Place skewers in pan. Shared 💡 Skewers may need to go diagonal to fit.
  5. Air Fry at 400°F for 5 min, flip, 5 more. Beef should be caramelized. Top Oven 💡 Beef at 130°F for medium-rare, 140°F for medium.
  6. Meanwhile simmer reserved marinade with cornstarch slurry until thick. Shared 💡 Cornstarch transforms marinade into sticky glaze.
  7. Brush skewers with glaze. Garnish with sesame seeds and green onions. Shared 💡 Double-glaze for extra sticky, shiny finish.
💡 Ninja Tips

Soak skewers or they burn. Homemade teriyaki crushes bottled. Dont overcook — beef keeps cooking after removal. Double-glaze for shine.

Scaling: Double: Two batches. Half: 1/2 lb beef; halve marinade.
