Vegetables
  • 1 medium zucchini (cut into 1-inch chunks)
  • 1 yellow squash (cut into 1-inch chunks)
  • 1 red bell pepper (cut into 1-inch pieces)
  • 1 red onion (cut into wedges)
  • 1 cup cherry tomatoes (whole)
Seasoning
  • 3 tbsp olive oil (extra virgin)
  • 2 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper (freshly ground)
Garnish
  • 1/4 cup feta cheese (crumbled)
  • 2 tbsp fresh basil (chiffonade)
📝 Instructions
  1. Cut all vegetables into similar-sized pieces for even cooking. Shared 💡 Similar size = everything finishes at the same time.
  2. Toss all vegetables with olive oil, garlic, oregano, salt, and pepper. Shared 💡 Coat thoroughly — oil prevents drying and promotes browning.
  3. Preheat Ninja on Air Roast at 400°F. Spread vegetables on sheet pan in single layer. Shared 💡 Crowding creates steam — single layer creates roast.
  4. Air Roast at 400°F for 10 minutes. Toss, add cherry tomatoes. Top Oven 💡 Tomatoes added mid-roast so they do not burst too early.
  5. Roast 10 more minutes until vegetables are tender with charred edges. Top Oven 💡 Charred edges = deep, sweet roasted flavor.
  6. Remove from oven. Sprinkle with feta and fresh basil. Shared 💡 Feta on hot vegetables gets soft and creamy — perfection.
💡 Ninja Tips

Similar-sized cuts for even cooking. Single layer = roast, not steam. Add tomatoes mid-roast. Char on edges is flavor. Feta goes on hot to soften.
